Sri Lankan Cooking Classes Worth Taking: Where Genuine Learning Happens

A cooking class in Sri Lanka can be one of the most valuable two hours you spend on the island or one of the most forgettable, depending entirely on who is teaching and in what context. The hotel-based cooking demonstration where a chef in a white uniform shows you how to make a toned-down version of hoppers is a different experience from the home kitchen class where a grandmother teaches you what her family has eaten for three generations.

The classes worth seeking out are the market-to-table ones: you start at the local market with the teacher and select the ingredients together, which is itself an education in what to look for and how to choose. Then you cook in the teacher's home kitchen, which means you see the actual tools, the actual setup, the actual way food is prepared in a Sri Lankan domestic context. Then you eat what you made at the family table. This is the format that produces genuine learning.

In Colombo: the cooking classes run by a collective of home cooks in the Colombo 5 area have an excellent reputation among food-conscious visitors. In Galle: several Fort residences now offer home cooking classes that use the garden herbs and local market produce with genuine seriousness. In the hill country: the estate cooking classes at Amba and at several tea estate guesthouses connect the cooking directly to the agricultural landscape that surrounds you. Ask your guesthouse which local cooks do classes rather than booking through aggregator sites.
